Grill Smoked Poultry - Moist, Tender and Mouth-Watering

Enjoy delicious grill smoked poultry. Poultry grilled on a wood grilling plank turns out moist and tender with a subtle smoky flavor. Try our best recipes.

Putting your chicken on grilling plank as it bakes in the oven is an easy way to add lots more flavor to your bird with minimal effort. This recipe calls for halving the chicken before roasting, but leaving the bird whole works well too, especially when it's stuffed with lemons and herbs.

2 large alder grilling planks
3 pounds chicken wings, tips removed.


½ cup honey
¼ cup soy sauce
3 tbs. curry ketchup (or plain ketchup with ½ tsp. curry powder added)
2 garlic cloves, minced
1 tbs. melted butter
1 tbs. Sriracha

Turkey Brine:

6-8 quarts homemade stock (enough to cover the turkey)

2 cups coarse sea salt or kosher salt

2-3 bay leaves

4-6 sprigs fresh thyme

Wiesn Hendl a.k.a. Oktoberfest Chicken on a Grilling Plank

There seems to be a theme in our chicken recipes...they all seem to contain beer. Does that say something about our level of professionalism or just that we are enthusiastic grillers who like to throw beer into almost all of our recipes? You can be the judge of that. This grilled chicken recipe is DELICIOUS....

This chicken is good to eat as an entree, on top of a salad, or with pasta.


1 cedar or alder Wildwood Grilling Outlet grilling plank, soaked for 1-2 hours before use.

2-3 Large chicken breasts

4 tbs. Chopped fresh basil

Zest and juice of 1 lemon

1 tbs. minced garlic

Dash of olive oil

Salt and Pepper to taste

From now on I'm grilling turkey breasts instead of whole turkeys for the holidays that mandate them. 

Sure, a turkey breast comes in kind of a weird-looking meat bag (see second photo), but besides that there are nothing but upsides. It's a much more manageable-sized amount of meat, it tastes delicious and smokey and the compond butter is to die for.

AKA- The Thanksgiving Leftover Sandwich
After the holiday.... you are left with lots of turkey. Make this hot, delicious sandwich! 

Here’s what you need:
1 loaf of crusty bread
1 lb of leftover plank-grilled turkey breast, sliced
Cranberry sauce
Provolone cheese


Slice your loaf of bread.
Assemble delicious sandwich....

Below I have listed my basic method of prepping these delicious wings. Note: The time in the oven will be longer the larger the pieces of chicken you use. i.e. if you decided to use full-size drumsticks apposed to wings and drumettes.

- Marinate wings and drumettes in desired sauce (BBQ, teriyaki, hot wing sauce) for 1-8 hours.
