Chanterelles: hunted, gathered, cleaned, transported, and dehydrated- check, check, and check. Two heaping coolers full of mushrooms shriveled away to only about a popcorn bowl of dehydrated fungi.

For this week's entry, we're going a little Greek. Homemade Pitas with Hummus and Tzatiki with Greek Salad.

Cedar Plank-Roasted Garlic (Why have I not thought of this before!? So easy, so delicious.)

First- Soak Outdoor Gourmet Fromagier Line Cedar Grilling Plank for an hour or more.

Next- Heat up your grill to Medium-Low Heat (300°) and cut the top off of a whole bulb of garlic.

Then- Drizzle with oilve oil and place sliced-side down on plank, then cover with foil. Roast garlic on plank for about 30 minutes.

Finally- Remove foil and enjoy... or do what I did and add to hummus.

 

Planked-smoked cheese is a delicious and impressive looking appetizer. It’s also really easy to melt the whole wheel of cheese off your plank and into the depths of your grill, possibly causing a grease fire, and wasting all of your lovely ingredients. We discovered that by shoring up the round of cheese with strips of cedar wraps, it not only preserves the structural integrity of the dish, it makes the cheese taste even more like cedar. We made used candied pecans to top off this wheel, but you can use your favorite chutney, tapenade, salsa or compote to change it up.

 

Ingredients

1 8oz. wheel of Camembert cheese...

Personal sized Cedar grilling planks, also called Cedar 4 x7's are great for this recipe. Small, convenient to soak, perfect for 4-8 oz. cuts of meat or fish, they fit in any purse, and they don't break the bank.

Ok, so this barely even counts as a recipe, as there is only a handful of ingredients, but it's so good!

Ingredients - 7 x 4 Outdoor Gourmet Cedar Grilling Planks, soaked for 1-8 hours; the longer the better!

- a couple ripe peaches

- fresh sage and thyme, or your favorite fresh herbs.

There’s this game I like to play. I call it “Good or Weird?” The game goes something like this...
